Sweet Potato Casserole

Adapted from Baxter Employees cookbook


6 sweet potatoes
2 eggs
1/2 cup sugar
1/4 cup canned milk
1/4 cup brown sugar
dash of cinnamon
dash nutmeg
1/2 tsp vanilla
1/2 stick melted butter
1/2 cup orange juice

Boil potatoes until tender; remove skins and cream with eggs, sugar, milk, orange juice, butter, cinnamon and vanilla. Put in oblong dish; top with the following mixture:

1 cup crushed corn flakes
1 tsp vanilla
1/2 stick melted butter
1/2 cup chopped pecans
1/2 cup brown sugar

Bake at 350 degree oven until bubbly.
